1. Heat tolerance
Oils normally modify their character once subjected to a very high temperature. Olive oil is best used when cooking at low or medium temperatures. In contrast, vegetable oil offers the benefit of sustaining very high temperatures. As such, using vegetable oil offers more versatility as you can prepare a vast array of foods without having to worry about the temperature.

2. Production
Vegetable oil production is done using a solvent process and industrial techniques for extracting the oil from plants. Most kinds of vegetable oils can be consumed by all people, particularly by people who have hypertension and diabetes. In contrast, olive oil extraction is performed through mechanical pressing of the tasty olive fruit. This oil has a unique flavor when it is used for cooking purposes and is edible.
